Chocolate Caramel Pecan Pie

This Chocolate Caramel Pecan Pie is for anyone with a sweet tooth.  It is a very rich dessert and is a huge improvement on an age old pie recipe, the pecan pie.  This pie will remind you of eating a candy bar.  Although a tad pricey to make, it is well worth the effort.  This is another recipe that is great to serve around holidays.  You can substitute a traditional pastry crust for this pie if you want to cut down on the cost.  If you choose to use a pastry crust, you can find the recipe below or buy a ready made crust. This Chocolate Caramel Pecan Pie recipe is my all time favorite and I hope you enjoy it also.

Chocolate Caramel Pecan Pie

2 cups finely chopped pecans

1/4 cup sugar

1/4 cup butter melted (half stick)

1 14-oz package caramels

1/4 cup milk

1 cup chopped pecans

1 1-oz squares semi sweet chocolate

1/3 cup milk

1/4 cup sifted powdered sugar

1/2 teaspoon vanilla

Combine first three ingredients in a small bowl; stir well. Firmly press mixture in bottom and up sides of 9-inch pie pan. Bake at 350 degrees for 12 minutes. Cool completely on wire rack. Place caramels in a medium sauce pan with 1/4 cup milk; cook over low heat until melt, stirring constantly. Remove from heat and pour over prepared crust. Sprinkle 1 cup chopped pecans over caramel mixture. Combine chocolate, 1/3 cup milk, powdered sugar and vanilla in a heavy sauce pan. Cook over low heat until chocolate melts, stirring constantly. Drizzle melted chocolate mixture evenly over pecans. Cover and chill for 2 hours.

Pie Crust Recipe

This is an easy and quick recipe for pie crust.  Be sure not to overwork the dough, as this can make for a tougher, less flaky pie crust.

2-1/2 cups flour

3 Tablespoons shortening

3 Tablespoons butter

3 Tablespoons ice water

Add shortening and butter to flour.  Cut through it crosswise or use a pastry blender until both shortening and butter are blended into the flour and mixture is coarse.  Add ice water and mix until dough rolls away from the bowl.  Roll on floured surface until dough is the size of pie desired.
