Gift Giving Carrot Cake
This gift giving carrot cake recipe will be a winner when you give it to your loved ones. This carrot cake is rich and moist, topped with a silky lemon frosting that will compliment it nicely.
3 cups unsifted flour
2 tsp baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon salt
1 – 1/2 cups sugar
3/4 cup mayonnaise
1 – 20 ounce can of crushed pineapple in juice, well drained. Reserve 1/2 cup juice.
3 cups coarsely shredded carrots
1 cup raisins
1 cup coarsely chopped walnuts
Silky Lemon Frosting (recipe follows)
Grease and flour six 5-1/2″x3″x2-1/2″ loaf pans or two 9″ x5″x3″ loaf pans. Mix first five ingredients. In large bowl with mixer at medium speed, beat eggs, sugar, mayonnaise crushed pineapple and 1/2 cup juice until well blended. Gradually beat in flour mixture until well mixed. Stir in remaining ingredients. Turn into prepared pans. Bake at 350 degrees for 50 – 55 minutes or until tester inserted into center comes out clean. Cool in pans for ten minutes. Remove from pans.
Frost with Silky Lemon Frosting and refrigerate.
Silky Lemon Frosting
In small bowl with mixer at low speed, beat 1 package 8 ounce cream cheese, softened and 1/2 cup butter until smooth. Beat in 1 tablespoon lemon juice and 1 teaspoon grated lemon rind. Gradually beat in 1 1/2 cups unsifted confectioner’s sugar until light and fluffy.
