Magic Mocha Cake
Magic Mocha Cake is every chocolate lover’s dream. There are four layers of chocolate mocha madness. Magic Mocha Cake will be your favorite chocolate dessert! This recipe uses mayonnaise that makes the cake moist and rich. Be sure to use real mayonnaise. You can refrigerate leftovers covered.
Magic Mocha Cake
2-1/4 cups unsifted all purpose flour
1 -1/2 teaspoon baking soda
1/4 cup instant coffee
1-1/3 cups water
1-2/3 cups sugar
1 teaspoon vanilla
1 cup mayonnaise (real mayonnaise)
2 squares (1 ounce) each unsweetened chocolate melted and cooled
Mocha Frosting (Recipe below)
Grease and flour two nine inch round cake pans. Mix flour and baking soda. Dissolve instant coffee in water in large bowl with mixer at high speed, beat next three ingredients until light and fluffy. At low speed blend in the mayonnaise and melted chocolate. Add flour mixture alternately with coffee beating well after each addition. Pour into prepared pans. Bake in a 350 degree oven for 30 minutes or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes. Invert cake pans and remove cake. Let cool. Split each layer in half. Fill and frost with Mocha Frosting.
In saucepan place 1/2 cup milk and two tablespoons instant coffee and three squares unsweetened chocolate. Cook over low heat, stirring constantly until smooth and thick. In large bowl with mixer at medium speed beat 2/3 cup butter. Gradually beat in one 16 ounce package confectioner’s sugar. Add another package 16 ounce confectioner’s sugar alternately with chocolate mixture, beating after each addition. Add 1 teaspoon vanilla. Gradually beat in 2 to 3 tablespoons of milk until frosting is of spreading consistency. Makes 4 – 1/2 cups of frosting.
